However, you can also put some dried fruits and vanilla extract to add goodness and enhance the flavor.

If you wish, you can take it further by adding seeds such as sunflower seeds, pumpkin seeds, and/ or sesame seeds. When you do, make sure you roast the seeds in a pan and let them cool before using. This way, you will give crunchiness to the flapjacks.

Equipment Needed

  • Mixing bowl.
  • Spatula.
  • 20 cm/ 7-inch square baking tin.
  • Cooking pan.

How To Make No Bake Flapjacks

It is so easy that even your five-year kid can help you make and have fun with it.

All you have to do is melt the butter, and set honey and vanilla extract (if using), in a pan that is big enough to fit the oatmeal.

Cook until all is melted and the mixture reaches almost a boiling point. You will see it has small bubbles on the edges and a little in the middle.

Then add the oatmeal to the mixture and cook it for about 2-3 minutes until all the liquid evaporates. If using, you can add the chopped dates now and mix them well. The mixture will be thick and sticky, but that is ok.

Lastly, put the flapjack mixture onto a lined 20 cm/7-inch square pan. Spread it evenly and press gently. Sprinkle the sesame seeds over if you use them. Again, press lightly with the back of a spoon or a spatula.

Leave the flapjack to cool down and set. It takes about 15-20 minutes or until you can feel it firm to touch.

Equipment

  • Mixing bowls.

  • Spatula

  • 20 cm/ 8-inch square baking tin

  • Cooking pan

Ingredients

US CustomaryMetric

  • 1 ¾ cup oatmeal porridge.
  • ½ cup set honey.
  • ½ cup butter diced.
  • ¼ cup chopped dates optional.
  • 1 teaspoon vanilla optional.
  • 1 teaspoon sesame seeds optional.

Instructions

  • Line a 20 cm/7-inch square baking tin with greaseproof paper/ parchment paper.

  • Place the butter, honey and vanilla extract (if you use flavouring) in a pan. Cook it until butter and honey melt, and the mixture bubbles on the edges and is slightly foamy in the middle.

  • Add the oatmeal porridge to the butter mixture and continue cooking for 2-3 minutes until the liquid evaporates.

  • Add the chopped dates and stir well.

  • Put the flapjack mixture onto the lined baking tin. It will be thick and sticky. You can use a spatula or a spoon to spread evenly and press it lightly.

  • Sprinkle the sesame seeds over the flapjack and press it lightly with the spatula or the back of a spoon.

  • Leave it cool and set.

Notes

  • I strongly recommend you use set honey. But of course, you can use runny honey. Though it may take longer to cook the oatmeal until the liquid is absorbed by the oatmeal.
  • You can swap the dates with other dried fruits that you like. Raisins, sultanas, apricots, and figs are all good choices.
  • If you want to put seeds such as pumpkin seeds or sunflower seeds in the mixture, try to roast them in a pan and cool them before using. So they will be crunchy. And you can stir them into the mixture just before all the liquid disappear.
