Mini Baked Potatoes Recipe (2024)

How to make easy mini baked potatoes - these bite sized potatoes make a great side dish or party food for bonfire night and the festive season!

Today I have a really simple recipe to share with you for mini baked potatoes. These little bite-sized potatoes are perfect as a side dish (they go brilliantly with sausages if you're throwing abonfire night party this week!), party food or even a healthy little snack. They can be eaten warm or cold and you could even pack them in a lunch box.

Use goats cheese and skip the sour cream to make these dairy free, or swap out the toppings altogether for any other toppings of your choice - other toppings that would work well include cranberry sauce with grated mozzarella, cream cheese, prawn co*cktail, tuna or coleslaw or even baked beans!

Mini Baked Potato Bites

Ingredients:

  • 1 kg baby potatoes
  • 1 tbs olive oil
  • smoked paprika
  • cumin
  • sea salt

To serve:

  • Sour cream
  • hard goats cheese or cheddar cheese
  • small handful chives

Method:

Preheat the oven to200°C (Gas mark 6/390°F).

Scrub the potatoes, then drain and pat with a clean tea towel or kitchen roll until completely dry.

Throw the potatoes into a roasting tin with the oil, give a good shake to coat then sprinkle over smoked paprika, cumin and crushed sea salt to taste.

Shake again so that the potatoes are evenly coated in the spices then pop in the oven to bake for30 minutes.

After 30 minutes, give the potatoes another good shake and bake for another 15 minutes or until golden and cooked through.

Once cooked, remove from the oven and leave for 5 minutes to cool a little. Once cool enough to handle, cut a cross into the top of each potato and squeeze them slightly to open up the crosses.

Grate the cheese (I used hard goats cheese for mine so that my dairy free husband could eat some of them).

Place the potatoes on a platter or serving dish, then top each one with a dollop of sour cream or good pinch of grated cheese. Sprinkle over chopped chives and serve.

It states for a non-dairy version, replace the sour cream with goat's milk cheese. But cheese is also a dairy product, so how would that make it a dairy free recipe?

Hi Susan, many people with a dairy allergy or intolerance (my husband included) can have goat milk products - dairy products are usually classified as milk products from cows. Everyone's circ*mstances are different of course, and I have offered a range of other topping options in the post above for those who can't have either. Hope that helps!

FAQs

Do you need to poke holes in small potatoes before baking? ›

Yes! Pricking the potatoes with a fork creates tiny holes that allows steam to escape. This prevents your potato from bursting open in the oven (and making a mess!).

Do small potatoes take longer to cook than large potatoes? ›

A smaller potato will cook in less time than a larger one, such as the 40 counts that Morton's Steakhouse wait staff present on the mobile cart in the dining room. Those giant Russet Burbank potatoes can be baked in about an hour if you follow these guidelines. Preheat the oven to 400 degrees.

How many pounds of mini potatoes per person? ›

You can easily double it or half it if you need a different amount. I find 2 1/2 pounds of baby potatoes feeds my family of five with a little bit leftover most days. Usually a good rule for baby potatoes is about 1/2 pound per person, but it obviously depends on the people eating!

What happens if potatoes aren't cooked enough? ›

Raw potatoes contain solanine and lectins, two compounds that can cause gastric distress and potentially make you sick. Additionally, raw potatoes contain resistant starch, which is difficult to digest, and their overall taste and texture is nothing like the potatoes you know and love. When in doubt, cook that potato.

Do smaller potatoes take less time to bake? ›

Smaller spuds might take a little less time, while larger baking potatoes over 1 pound might take a little more. For a fully baked Idaho Russet Burbank, the internal temperature should be right at 210 degrees F.

Why is it advisable not to wrap potatoes in foil while baking? ›

Trapping that spud in aluminum foil where the moisture cannot escape results in a wet potato. Over baking the potato in foil cannot be seen (or easy to smell that it is overcooked) so you can end up with dark brown skin on the bottom, tough to eat and giving off a slightly burnt taste.

What happens if you forgot to poke holes in a baked potato? ›

I would just skip poking the potato all together. It is very rare that a baked potato will burst if the steam can't escape.

Should you bake potatoes in foil or not? ›

Toups also calls out a common mistake people make when baking potatoes. "I see a lot of people using foil to wrap their potatoes in but this is a big no-no and causes soggy skins!" he says. Foil holds in moisture and steams the potatoes, resulting in a "boiled" taste and texture.

Why are small potatoes more expensive? ›

Why are small potatoes often more expensive than larger ones? Small potatoes that are selling at a higher price than larger potatoes of the same variety are more expensive because they are harvested earlier, before they get their full growth. The farmer gets more money for new small potatoes……

How big are mini potatoes? ›

Baby potatoes are harvested before they reach maturity and are smaller in size, typically around 1-2 inches in diameter. They are often sold with their thin, delicate skin still intact and are prized for their sweet flavor and tender texture.

What is the difference between potatoes and small potatoes? ›

New potatoes are much smaller than mature potatoes, with softer, thinner skins and a higher moisture content. They are also much lower in starch than mature potatoes. New potatoes typically retain their shape when cooked, which makes them a popular choice for cold potato recipes like potato salad.

How many small potatoes is 2 pounds? ›

How do you make sure potatoes are fully cooked? ›

The potatoes are done when tender.

The potatoes are done when they are tender all the way through. You can test this by poking the potato with a fork, paring knife, or skewer. If the utensil slides easily all the way to the center, the potatoes are done.

Do baked potatoes continue to cook while resting? ›

Don't exceed the recommended cooking time because potatoes will continue to cook after they're removed from the oven and the skin will get dry. "Another common mistake is letting the potato rest or cool before cutting. This is not meat and the potato doesn't get better with resting.

Can you overcook a baked potato? ›

Visual signs: The potato skin will start to wrinkle when over cooked. The potato, when wrapped in foil or placed on the bottom of a pan will have a dark brown spot on the bottom, a sure sign of over cooking. Foil traps the moisture in the potato causing the skin to be wet and the inside flavorless or gummy.
